A South African Favourite: the chocolate crunchie

We made these with the ladies at our baking workshop and they were an absolute hit..they are kind of like the English flapjack,but with a kick :)

Ingredients                                                                    

2 cups cake flour                                 
2Tbl spoons cocoa
2 Tsp bp                                          
3 cups of oats
1 cup of coconut
1cup of sugar
350g margarine(melted)


Method: Preheat the oven to 180 degrees C.
Sift together the flour,cocoa and baking powder in a large mixing bowl.Add the oats,coconut and sugar and mix.
Add the melted margarine and mix until dry ingredients are well moistened.
Press the mixture into sprayed baking tray,spreading it evenly.
Bake for 25-30 minutes or until baked through and slightly crisp.


Icing
2 cups icing sugar
2 Tbl cocoa                                                  
2 Tsp melted margarine
1/5 cup warm water

While crunchies are in the oven,prepare the icing

Sift together the icing sugar and cocoa.Add the margarine and water and mix to form a stiff paste.Spread over the crunchies while still hot.Cut crunchies while still warm ( no kidding because if you don't you will need about three people to get them out of the pan).
